Ingredients :
8 slices bacon, chopped
4 cups roasted broccoli
½ large onion, chopped
2 cups shredded cheddar cheese
2 cups chicken broth
2 cups calorie countdown
¼ cup shredded Parmesan cheese
2 tsp butter
2 tbsp coconut flour
½ cup heavy cream
2 tsp minced garlic
½ tsp salt
¼ tsp cayenne pepper
Direction :
1. In a large pot, cook the bacon over medium heat until crisp and cook through.
2. Chop ½ onion while bacon cooks.
3. Remove bacon and let dry on paper towels. Remove all but 3 tbsp grease from
pot.
4. Add butter to grease. Then sautee onions and garlic for 4-5 minutes
5. Add coconut flour after onions become translucent, cook for 1 minute.
6. Measure out cream and milk together. Pour the mixture into the pot ¼ at a time
until it begins to bubble. Combine well and reduce heat to medium-low.
7. Add cheddar and parmesan cheese and mix well.
8. Simmer for 2-3 minutes, add broccoli, and simmer for 2-3 minutes more.
9. Add bacon and allow to simmer for 5 minutes.
10. Blend everything with an immersion blender until chunky, then add broth,
cayenne pepper, and stir again.
11. Let simmer for 20-30 more minutes, making sure to stir every 5 minutes.
Serve and enjoy.
