 Tangy Pear and Blue Cheese Salad


 Ingredients :


1/3 cup ketchup 

½ cup distilled white vinegar 

¾ cup white sugar 

2 tsp. Salt

 1 cup canola oil 

2 heads romaine lettuce, chopped 

4 ounces Crumbled blue cheese

 2 Pears, Peeled, cored and chopped 

½ cup Toasted chopped walnuts 

½ Red onion, chopped 


Method

 In a small bowl, ketchup, sugar, vinegar, and salt are well combined. Gradually pour in oil, stirring constantly, until well blended. In a large serving bowl, toss together the lettuce, blue cheese, pears, walnuts, and red onion. Pour dressing over salad and toss to coat.

Spicy Italian Salad 



Ingredients:


 ½ cup Canola oil 

1/3 cup Tarragon vinegar

 1 tbsp. White sugar

 1 Red bell pepper, cut into strips 

1 Grated carrot

 1 Thinly sliced red onion

 ¼ cup Black olives

 ¼ cup Pitted green olives 

½ cup Sliced cucumber 

2 tbsp. Grated Romano cheese Ground black pepper to taste 


Method 


In a medium container mix the canola oil, sugar, dry mustard, thyme and garlic in a bowl. In a large bowl, toss together lettuce, red bell pepper, carrot, red onion, artichoke hearts, black olives, green olives, cucumber, and Romano cheese. Place in the refrigerator for 4 hours, or overnight. Season with pepper and salt. Serve chilled.

 Caesar Salad II 


Ingredients


1 head romaine lettuce 

2 cups Croutons

 1 Juiced lemon

 1 Dash Worcestershire sauce 

6 cloves garlic, minced 

1 tbsp. Dijon mustard ½ cup Olive oil 

¼ cup Parmesan Grated cheese 


Method 


Crush the croutons in a deep mixing bowl .Set aside. Mix the mustard, lemon juice and Worcestershire sauce in a bowl. Blend thoroughly in a mixer and slowly add olive oil until creamy. Pour dressing over the lettuce. Add the croutons and cheese and toss well. Serve immediately.

Salad with Prosciutto and Caramelized Pears and Walnuts


 Ingredients:


 2 cups orange juice

 2 tbsp. Red wine vinegar 

2 tbsp. finely chopped red onion

 1 tbsp. White sugar 

1 tbsp. White wine

 1 cup Walnut halves 

½ cup White sugar

 ¼ cup Water 

¾ cup virgin Extra olive oil 

1 tbsp. Butter

 2 Pears - peeled, cored and cut into wedges Prosciutto, cut into thin strip 1/4 pound 

2 Romaine hearts, rinsed and torn


 Method :


In a medium saucepan, first heat orange juice over medium-high heat, whisking often, until it is reduced by 1/4. Add to a blender, along with the vinegar, onion, sugar, wine, salt and pepper. Melt butter in a non-stick skillet over medium heat while blending on a low speed, remove cap and slowly drizzle in the olive oil to emulsify the dressing. Add sugar and water and cook, stirring constantly. Sauté pears and nuts in butter for 3 minutes. Remove from heat and set aside to cool. Add vinaigrette. Now, serve on a large Italian platter.
