Potato Salad with Goat Cheese

 Ingredients 

2 ½ pounds of potatoes 

1 clove of garlic, minced

 ¼ cup of white wine, dry

 1 tsp. of Dijon mustard 

½ tsp. of salt 

2 tsp. of olive oil 

½ tsp. of black pepper 

2 tsp. of tarragon, chopped 

1/3 cup of onion, chopped

 ¼ cup of red wine vinegar 

½ cup of parsley, chopped 

3 ounce of goat cheese

 ¼ cup of sour cream 


Method to prepare potato salad recipe 

Boil potatoes in water till tender. Mix potatoes, wine vinegar, pepper, and salt in a bowl. Keep aside for 15 minutes. Now add the rest of the ingredients to the potato mixture and mix well. Serve immediately.

Pico de Gallo - Authentic Mexican Salsa 


Ingredients:


 3 large Diced tomatoes, sautéed

 1 diced Medium-sized onion

 ¼ bunch Cilantro, use more or less depending on your taste Optional ingredients

 ½ Peeled and diced cucumber

 Lemon juice of ½ lemon 

½ tsp. Minced garlic

 Salt to taste 

2 Jalapenos, or more if you prefer it hotter

 1 dice Peeled avocado

 Method

 Combine all the ingredients in a large mixing bowl and toss well. Serve immediately.

Olive Oil and Lemon Salad Dressing


 Ingredients:


 8 cloves of garlic minced

 ½ tsp. Black pepper 

1 cup fresh squeezed lemon juice 

2 tsp. Salt

 ½ cup Extra Virgin Olive Oil 


Method to prepare Olive Oil and Lemon Salad Dressing


 Place all the ingredients in a blender and blend until all the ingredients are incorporated. This dressing should be stored in an airtight container and should be used soon, or else the dressing will get bitter due to the lemon juice in it.

Bean, Corn & Avocado Salad


 Ingredients: 


1 can black beans, drained

 1 can Yellow Sweet Corn, Canned, drained 

2 tbsp. Lime Juice 

1 tsp. Olive Oil 

4 tbsp. Cilantro 

5 cups chopped raw onions 

1 Avocado

 1 Red Ripe 

Tomatoes 


Method to prepare Bean, Corn & Avocado Salad


Place all the ingredients in a large mixing bowl and mix gently. Serve immediately or serve cold.

 Southwest Pasta Salad


 Ingredients: 


1-8 ounces Small whole-wheat pasta 

15 ounces Corn 

15 ounces Black beans 

1 cup Salsa, any variety 

1 cup cheddar cheese, shredded

 1 cup diced green pepper, bell pepper 


Method to prepare Southwest Pasta Salad


Prepare pasta according to package directions. Drain, rinse and put into a large bowl. The liquids are reserved and drained from the canned corn and black beans. Combine all ingredients with the cooked pasta in a large bowl. Add small amounts of the reserved canned liquids that are added if required. Serve immediately.

 Roasted Beet Salad


 Ingredients: 


6 Yellow beets, 1/2 pound 

3 tbsp. Olive oil

 Fresh cracked black pepper

 1 ½ tbsp. Tarragon or sherry vinegar 

1 tbsp. thyme leaves 

4 cups mixed salad greens 

½ cup Crumbled feta cheese 

1 tbsp. mint 


Method to prepare Roasted Beet Salad


At first, the oven is preheated to 375 degrees. Place the beets in a shallow covered baking dish. Add enough water to come 1/2 inch up the dish. Cover the beets and roast for an hour or until beets are easily pierced by a paring knife. Remove the beets from the oven. In a medium bowl, whisk together the vinegar and chopped herbs. Chop the cooked beets into 1/2 inch cubes, and then toss with the dressing. Sprinkle on the feta cheese and serve immediately.

Oh Boy, Salad! 


Ingredients: 

1 cup Tomatoes, chopped or sliced 

1 cup Pared cucumber, chopped

 1 tsp. Dried dill weed 

1 tbsp. Light mayonnaise


 Method to prepare Oh Boy, Salad! 


Add all the ingredients in a large bowl and toss well until all the ingredients are incorporated. Refrigerate overnight and serve chilled.
