Mayo Grape Chicken Salad 

Ingredients 

6 cups of chicken, chopped and cooked 

½ cup of pecans 

2 tsp. of Dijon mustard 

2 cups of red grapes, sliced

 ½ cup of sour cream 

2 tsp. of poppy seeds

 ½ cup of mayonnaise 

2 cup of celery, chopped

 1 tsp. of lemon juice 

Method to prepare Mayo Grape Chicken Salad 

Take a mixing bowl and mix chicken with mayonnaise, lemon juice, sour cream, grapes, poppy seeds, Dijon mustard and celery. Adjust salt and pepper. Cover the mixing bowl and refrigerate it till chilled. Add pecans and serve immediately.

Cream of Potato Herb Salad 

Ingredients 

¾ cup of sour cream 

1 cup of green peas 

¼ cup of yoghurt 

6 cups of red potatoes, cut in quarters

 1 tsp. of thyme, chopped

 ½ tsp. of salt 

1 tsp. of dill weed, chopped

 Method to prepare Cream of Potato Herb Salad 

Mix cream, yoghurt, dill weed, thyme and salt in a mixing bowl and keep it separately. Cook the potato quarters and green peas in enough water till tender. Drain out the extra water. Mix potato and peas in the mixture prepared. Toss well to mix the ingredients thoroughly.

 Tangy Chicken Salad with Raisins


 Ingredients

 ¼ cup of mayonnaise

 3 tsp. of raisins

 1 tsp. of curry powder 

1/3 cup of celery, cut into dices 

1 cup of lemon chicken, grilled 

1 apple, chopped 

1/8 tsp. of salt

 2 tsp. of water 

Method to prepare Tangy Chicken Salad with Raisins

 Mix curry powder, mayonnaise and water in a bowl. Add lemon chicken, chopped apple, raisins, celery and salt to it. Use a spatula to mix the ingredients thoroughly. Cover the salad and refrigerate till chilled.

Mint Potato Salad 


Ingredients 


7 red potatoes

 1 cup of green peas, frozen and thawed 

2 tsp. of white wine vinegar 

½ tsp. of black pepper

 2 tsp. of olive oil 

¾ tsp. of salt 2 tsp. of shallots, finely chopped

 ¼ cup of mint leaves, chopped 

Method to prepare Mint Potato Salad 

 Boil the potatoes in water in a deep bottomed pan till tender. Cool the potatoes and cut into cubes. Mix vinegar, shallots, mint, olive oil, salt and black pepper. Place potato cubes, peas and the mixture prepared. Mix well and serve.

Chicken Curry Salad with Mixed Greens


 Ingredients 


Chicken curry, frozen and thawed 10 ounce of spinach leaves

 1 ½ cups of celery, chopped

 ¾ cup of mayonnaise

 1 ½ cups of green grapes, cut into halves 

½ cup of red onions, chopped 


Method to prepare Chicken Curry Salad with Mixed Greens


In a mixing bowl place the frozen chicken curry. Add red onions, green grapes, baby spinach leaves and celery to the chicken curry. Mix well. Now add in mayonnaise and mix again thoroughly. Adjust the salt and pepper as per taste.

Nutty Chicken Salad


 Ingredients 


1 cup of bulgur

 2 scallions, cut into slices

 2 cups of chicken broth

 3 cups of chicken, cooked and chopped 

1 apple, cut into dices 

3 tsp. of walnuts, chopped 

¼ cup of olive oil 

2 tsp. of cider vinegar

 1 tsp. of Dijon mustard 

1 tsp. of brown sugar 

Salt


 Method to prepare Nutty Chicken Salad

Boil bulgur with broth and simmer. Cool for 15 minutes. Toast walnuts in a frying pan and place in a bowl to cool. In a mixing bowl mix all the ingredients thoroughly. Adjust salt and serve.

Mustard Chicken Salad


 Ingredients 


1 egg, boiled 

¼ tsp. of black pepper

 ¾ pound of fingerling potatoes 

¼ tsp. of kosher salt

 2 tsp. of mayonnaise, low fat

 3 tsp. of red onion, chopped 

1 tsp. of yoghurt 

1/3 cup of celery, chopped 

1 tsp. of mustard 


Method to prepare Mustard Chicken Salad


Cut potatoes into cubes and boil till tender. Chop the boiled egg. Mix all the ingredients except eggs and potatoes. Add the mixture on the chopped eggs and potato cubes. Toss well so that the ingredients mix well. Adjust salt and pepper as per taste.

 Tangy Ginger Potato Salad


 Ingredients


 2 pounds of red potatoes, cut into cubes

 2 tsp. of cilantro, chopped 

2 tsp. of rice vinegar 

1/3 cup of green onion, sliced 

1 tsp. sesame oil 

1 jalapeno pepper, finely chopped

 4 tsp. of lemongrass, minced

 ¾ tsp. of salt 

2 tsp. of ginger, grated 


Method to prepare Tangy Ginger Potato Salad

 Boil potatoes till they turn tender. Drain out the excess water. Combine rest of the ingredients thoroughly. Top the boiled potatoes with the mixture. Use a spatula to mix the ingredients.

 Celery and Potato Salad


 Ingredients


 2 pounds of red potatoes, cut into cubes

 2 ounce of pimientos, diced 

½ cup of canola mayonnaise 

1/8 tsp. of garlic powder

 ¼ cup of green onions, chopped 

¼ tsp. of black pepper ¼ cup of yogurt

 ½ tsp. of celery seeds ¼ cup of cream, sour

 ½ tsp. of salt

 1 tsp. of sugar 

1 tsp. of white wine vinegar 

2 tsp. of prepared mustard 


Method to prepare Celery and Potato Salad


 Boil potato cubes till they turn tender and drain out the excess water. Cool the boiled potatoes for about 30 minutes. Mix rest of the ingredients in a mixing bowl. Add potato cubes and toss well to mix.

 Lime Chicken with Potato Salad


 Ingredients

 1 pound of potatoes 

1 clove of garlic, chopped

 2 cups of peas 

½ tsp. of black pepper

 2 cups of chicken breast, chopped 

1 tsp. of salt

 ½ cup of red bell pepper, chopped

1 tsp. of salt

 ½ cup of onion, chopped 

1 tsp. of tarragon, minced 

1 tsp. of lime juice

 2 tsp. of olive oil

 1 tsp. of Dijon mustard


 Method to prepare Lime Chicken with Potato Salad


Cook potato, peas, and chicken breast separately till tender. Mix the rest of the ingredients in a bowl. Now add potato cubes, peas, and chicken breast in the mixing bowl. Use a spatula and mix the ingredients thoroughly. Serve immediately.
