1-Ingredients : 


   Dough : 


- 200 g of flour
- 40 cl of milk
- 15 g of baker's yeast
- 1/2 teaspoon baking powder
-the echta (the cream for 20 atayefs)
- 1250 g of cottage cheese diet (or mascarpone)
- 5 cl of fresh cream 10 cl of milk
-1 teaspoon of semolina
- 1 tablespoon of orange blossom water syrup

   Decoration:


20 g of crushed pistachios

Ater (sugar syrup):


- 1 cup of sugar
- 1 cup of water
- 2 tablespoons of orange blossom water
- 2 to 3 drops of lemon juice

 2-preparation method : 


1- prepare the dough: In a bowl put the baker's yeast and let it rise

2- In a bowl, put the flour, baking powder, and sugar. Add the milk mixed with the sourdough. Mix well and let stand for 1 hour.

3-Prepare the cream: in a casserole, heat the milk then add the fresh cream

4- Add the semolina, stir until a thick cream is obtained, cover and cool in the fridge

5- In a small pan, Pour a ladle of dough and cook on one side. Do not place the patties on the others otherwise, they will stick.

6- Take the patties and fold them into a cone shape and pinch well to stick the ends.

7-Put the prepared cream in a bowl and add the mascarpone. Whisk with an electric mixer.

8- Add the sifted icing sugar and continue beating. Until obtaining a light cream.

9- Fill the crêpes in cornet with a teaspoon in the crushed pistachios. Serve and drizzle with syrup (Ater).
