1-Black forest style pancakes: 

      The Black forest pancakes is a new kind or type of pancakes from the arabic cuisine exatly the Algerian one the first chef prepare this kind is Oum Walid . With simple ingredients that are available in almost every home and an easy method of preparation in ways that bigginers and hobbyists can prepare as professional chefs. The name of this crepe is inspired by this shape which is like the forest and the black color and comes from the cherry of black decoration 'the black forest' so let's show you the ingredients and the preparation method of this Black forest style pancakes .


- 100 g of chocolate
- Some whole cherries
Cherry filling:
- 250 g pitted cherries
- 2 to 3 tablespoons caster sugar
- 3 tablespoons of water
- 1/4 teaspoon cinnamon
- 20 cl of thick fresh cream
- 3 tablespoons of sugar
- 1/2 package of whipped cream powder
- 1 teaspoon of vanilla (aroma)

Preparation method:

In a saucepan, put the pitted cherries, add the icing sugar, the cinnamon and the 3 spoons of water. Cook for about 7 minutes. Drain and let cool
- In a cold bowl, whip the fresh cold cream with an electric mixer, add the icing sugar and continue beating. At the end add the whipped cream
- Spread a tablespoon of ice on the pancake then place the cooked cherries in the middle. Fold the pancake in half
- Once the crêpe is folded, roll it on itself until the end. Cut the ends.
- Place the rolled crêpes in a dish and cover them with the cream.
- Sprinkle with grated dark chocolate and garnish with a few cherries. Keep cool before serving.

2- Pancake and pear caramel chaplet

Ingredients : 

- 3 ripe pears
- Caramel or maple syrup
- Coconut
- Brown sugar
- Ribbon
- Anise star

The preparation method: 

- Preparation of the pear compote:
in a frying pan, melt the butter and brown the diced pears.
- Sprinkle with brown sugar, let it come back for a few minutes and keep warm.
- Put two tablespoons of pear compote in the middle of the pancake
- Fold the ends of the pancake towards the center
- Tie the purse with decorative ribbon, and coat with caramel or maple syrup.

3- Puffed Pancakes with Orange

Ingredients : 

- icing sugar for decoration
Blown device:
- (Pastry cream base)
- 125 g orange juice
- 50 g milk
- 30 g powdered sugar
- 2 egg yolks
- 250g of flour
- 25 g of buerre (optional)
- 2 tablespoons orange juice

Preparation method : 

 - In a salad bowl, put the yolks and the sugar and whisk with an electric mixer, then add the flour and continue to beat.
- In a saucepan, heat the milk with the orange juice.
- Add the hot milk to the egg mixture and continue beating with a whisk.
- Continue to beat with an electric mixer and pour the mixture into a saucepan, stir until a thick cream is obtained. Remove from heat and add the butter and orange juice.
- In a bowl, beat the egg whites until stiff with a pinch of salt and a tablespoon of sugar. Add the egg whites to the prepared mixture.
- Put the pancakes in a baking dish, spread the prepared soufflé over half of the pancake and fold in half and bake at 200 degrees for 10 minutes out of the oven sprinkle with icing sugar.
